Gluten Free Blueberry Banana Walnut Muffins


I love to cook. The best part about cooking is coming up with new ways to eat old recipes. There are so many delicious muffins out there, why not combine them into one amazing one? That is what this is... The Blueberry Banana Walnut Muffin that also happens to be Gluten Free, although after you taste it, you wont even remember it is Gluten Free!
Ingredients:
1 Box of Krusteaz Gluten Free Blueberry Muffin Mix
3 Eggs
1/4 cup of Water
1/3 cup of Coconut Oil
1 Ripe Banana
1 Apple Sauce cup (Individual Serving)
8 Walnut Halves
1 Tbsp of Chia Seeds

Instructions:
Preheat oven to 400 degrees.
Make Mix as listed with eggs, water, applesauce, and mix. Heat up coconut oil just until melted. Mash banana into mix. Rinse blueberries. Add Coconut oil, walnuts, blueberries, and chia seeds. Gently mix together. Put paper cupcake cups into the cupcake pan. Divide Mix evenly into the 12 cupcake cups. They will seem full, but remember these are gluten free, so they do not rise much. Bake for the required 15 minutes and check. Rotate the pan and cook an additional 5 minutes or until a toothpick comes out clean. It usually takes the whole extra 5 minutes.

You can add or delete any of the extra ingredients that are extra from the box instructions except the applesauce. Adding the applesauce gives the batter a more smooth consistency and makes the muffins not taste dry and gritty like some gluten free baked goods.
